Bag Tag Challenge Every Sunday @ 9 am at Eagle Ridge

Breakfast being served at 9 am bag tags:    Apple French toast casserole
Ingredients:  makes 8 servings

5 Tablespoons butter

2 Large baking apples (peeled, cored & sliced)

1 cup brown sugar (firmly packed)

2 tablespoons dark corn syrup (light can be used)

1 teaspoon ground cinnamon

8 - 12 pieces (4" wide) 1" thick french bread

3 large eggs

1 cup milk

1 teaspoon vanilla extract

1.  The day before serving, prepare apples & french toast:  In large, heavy skillet, melt butter over medium heat.  Add apple slices & cook, stirring occasionally, until tender. 

2.  Add brown sugar, corn syrup, and cinnamon to apples.  Cook, stirring, until brown sugar is dissolved.  Pour apple mixture into 13 X 9 baking pan (greased) & spread evenly.  Arrange bread slices in one layer on top of apple mixture.

3.  In medium size bowl, with fork, beat eggs, milk, vanilla until well mixed:  pour over bread slices.  Cover with plastic wrap & refridgerate over night.

4.  Next day, heat oven to 375 degrees.  Remove plastic wrap from baking pan & bake french toast 30 to 35 minutes or until mixture is firm & bread is golden.  Cool in pan for 5 minutes.   Invert serving platter over casserole dish & carefully unmold so that apple layer is on the top.  Spoon apple slices/syrup (left over from pan) onto bread.

Sorry for any inconvenience but we can only commit to running one bag tag event.  Running both had us at the park from 8:30 in the morning until 3:30 in the afternoon.  We did ask for someone to run the 1pm & got no reply.

Tim Green has agreed to run the 1pm bag tags.  Turning the 2nd ace pot back to 1pm.  Taking the $3.00 out & adding back into the 9am, the 9am bag tag ace stands at $118.00.
